I was wondering what is the difference between the 520w and 600w powerstreams. I need the most amps possible but I don't understand how to read the specs. The 520w has 33a on the +12 and the 600w has 20a on +12v 1 and 18a on the +12v 2. How does this play out? is it 33a Vs. 38a 0r Vs. 20a and 18a?

The 520 is pretty straight forward because it only has one 12v rail, 33a X 12v = 396w. on a single rail PSU all of your 12v components will be pulling from the one rail.
The 600, being a dual rail PSU, will give you 20a X 12v = 240w and 18a X 12v = 216w respectively. One rail tipicly is sending power to the motherboard and the other is going to the rest of your devices. Splitting the rails can give you good stable power to the CPU and also supply your other components good power without affecting each other.
Here is a guide that will explain it better and help you make an informed decision. http://www.bleedinedge.com/guides/psu_select/psu_select_01.html
