I think it depends on what you want to do. As far as the core operating system I don't think there is too much difference between the two. If you want to setup a domain controller for your home network or something like that then server would be the solution. If you want to mess around with a web server or ftp server, you can do that with either one, but 2000 non-server's implementation of IIS limits you to 5 concurrent connections I believe.

I personally have used vanilla 2000 as both a web server and ftp server and have found it more than adequate for my needs. ie. putting up files for friends and then messaging them the IP address. As far as the web side I've used it mostly for testing and experimentation, I've never actually served any pages to the outside world.

I do think that server would have more services running by default than 2000 would and would require more setup time on your part to get it down to only what you require.

There is only a registry tweak that makes Pro and Standard Server different. I never liked Pro or Standard Server but loved Advanced Server. Advanced Server cannot be changed with a registry tweak. I discovered this after I decided that Advanced Server was much more stable and seemed to have a faster 'feel' to it. However, I prefer 2003 Enterprise Server the best for Windows OSes. :)
